I don't think gluten free equals a healthy diet unless you have some kind of gluten intolerance. Often, packaged gluten free foods are filled with other ingredients that are not so healthy. I mostly avoid cured meats (nitrates and nitrites) and too many carbs. I eat a lot more healthy, energy producing foods like unsalted roasted nuts (fiber and healthy fats), fruits and vegetables. I keep my meat portions small relative to the norm. I would have a hard time with gluten free anyway since I LOVE whole grain breads! I plan my meals around the vegetable, not the meat.
I cut out pork and red meat because I have gastroperisis. It really helped me.
I am gluten free and corn free. I am allergic to wheat & corn. I don't think it does anything to help my Lupus, but it does help my allergies especially my sinus and asthma. Not eating to much protein helps the Lupus. But I do eat protein in order to function otherwise my blood pressure is to low. So it's a vicious circle and I try not to bother other people with my diet and just eat what I can eat and leave what I can not eat. I am allergic to wheat, corn, nuts, fruit, and intolerant to fish and seafood so it is difficult. I have been doing this for many years especially corn and corn products, now everyone tries not to eat corn syrup products.
In the beginning of my diagnoses, I tried to eat very healthy, but I didn't find that it did such a huge impact on me. Although, I didn't give it enough time to really be commited to it. I also found it to be very expensive . I think everybody should eat healthy!
I cannot do gluten free as not gluten intolerant. I do small portion meals that look more like miniature meals six times a day because I cannot eat much at one time so I spread food out throughout the day. I have IBS and this works well for me.
